Ingredients
  

  • 6 large ripe tomatoes, chopped
  • 1 medium cucumber, peeled and chopped
  • 1 small red onion, chopped
  • 1 green bell pepper, chopped
  • 2 garlic cloves, minced
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup tomato juice
  • Fresh parsley for garnish

Instructions
 

Prepare the Vegetables

  • Wash all vegetables well under cold water. Chop the tomatoes, cucumber, onion and bell pepper into small pieces. Smaller pieces blend faster and give a smoother texture.

Add to Blender

  • Place the chopped vegetables into a blender. Add the minced garlic on top. Make sure not to overfill the blender. Blend in batches if needed.

Blend Until Smooth

  • Blend everything until smooth and creamy. If you like some texture, blend less. You can also pulse a few times for a chunky style.

Add Liquids and Seasoning

  • Pour in olive oil and red wine vinegar. Add salt and black pepper. Pour in tomato juice. Blend again for a few seconds to mix well.

Taste and Adjust

  • Taste the soup with a clean spoon. Add more salt or vinegar if needed. Adjust flavors slowly. Small changes can make a big difference.

Chill Before Serving

  • Pour the soup into a large bowl or container. Cover and place in the fridge. Chill for at least two hours before serving for best flavor.

Serve and Garnish

  • Stir the soup before serving. Pour into bowls or glasses. Sprinkle fresh parsley on top. You can also add small diced vegetables for garnish.

  • Use very ripe tomatoes for deep flavor.
  • Chill the soup well before serving.
  • Add a little lemon juice for extra freshness.
  • Store in an airtight container in the fridge for up to 3 days.
  • This soup is served cold, so no reheating needed.
