Ingredients
  

  • 1 package 15-bean mix
  • 1 onion chopped
  • 2 carrots chopped
  • 2 celery stalks chopped
  • 3 cloves garlic minced
  • 1 can 15 oz diced tomatoes
  • 6 cups vegetable or chicken broth
  • 1 tsp salt adjust to taste
  • ½ tsp black pepper
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 1 bay leaf
  • Optional: cooked ham or bacon pieces

Instructions
 

Step 1: Soak the Beans

  • Rinse the beans well. Put them in a bowl. Cover with water. Soak overnight or 8 hours. This makes beans cook faster.

Step 2: Prep Vegetables

  • Chop onion, carrots, and celery. Mince garlic. Keep all ready.

Step 3: Cook the Beans

  • Drain soaked beans. Put in a large pot. Pour in broth. Bring to boil. Then reduce heat to simmer.

Step 4: Add Vegetables and Spices

  • Add onion, carrots, celery, garlic, tomatoes, and spices. Stir well. Add bay leaf. Simmer gently.

Step 5: Simmer Until Tender

  • Cover pot. Cook 1–1.5 hours. Stir sometimes. Check beans for softness.

Step 6: Optional Meat

  • Add ham or bacon if you like. Cook 10 more minutes. Taste and adjust salt.

Step 7: Serve the Soup

  • Remove bay leaf. Serve hot in bowls. Enjoy with bread or crackers.
